Dalton Roasted Pecans
1 pound (about 4 cups) raw pecan halves
1 stick (1/2 cup) unsalted butter
1 to 2 teaspoons coarse salt, to taste
Heat the oven to 300 degree. Melt the butter in a cast iron skillet over low heat. Add the pecan halves. Cook, stirring constantly with a large wooden spoon, to coat pecan halves with butter.
Transfer the skillet to the oven. Roast, stirring with the wooden spoon every 10 to fifteen minutes, until pecans are browning on edges and roasted.
Transfer skillet to a wire rack. Add the salt, stirring with spoon to coat halves. Cool completely before serving. Store leftovers at room temperature in an airtight container.
